I didn't really learn to cook until I became vegan (in 1994.) So vegan cooking is all I know how to do. I used to cook all the time. But eventually life just got too busy and it wasn't a priority. And my health suffered as a result. Just didn't feel too dang good and I have gained quite a bit of weight over the years. So I'm trying to change that. One dinner at a time.
Now, understand, I am not a nutritionist. By any stretch of the imagination. I'm just doing what feels right to me.
I read "The Truth About Beauty." While far from vegan, it resonated with me. So I have roughly adapted the diet portion of the book to be vegan.
Basically, we are roughly following a low-glycemic, low-carb diet. Very whole foods based. Very little processed foods. Very little sugar.

And Kenn is forced to eat whatever I cook for dinner.
